2 cups frozen hash browns (thawed)

1 cup shredded cheddar cheese

6 large eggs

¼ cup milk

½ tsp salt

¼ tsp black pepper

1 tsp garlic powder

½ cup diced bell pepper (any color)

½ cup diced cooked ham or cooked sausage (optional)

Fresh chives or green onions for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Hash Brown Base: In a mixing bowl, combine the thawed hash browns, half of the shredded cheddar cheese, salt, pepper, and garlic powder. Stir until well combined.

      Shape the Cups: Lightly grease a muffin tin. Press the hash brown mixture evenly into the bottom and up the sides of each muffin cup to form a cup shape. Use your fingers or the back of a spoon for shaping. Aim for about ¼-inch thickness.

        Bake the Hash Brown Cups: Bake the hash brown cups in the preheated oven for about 20 minutes, or until they are golden brown and crispy.

          Prepare the Egg Mixture: While the hash brown cups are baking, whisk together the eggs, milk, diced bell pepper, and if using, the cooked ham or sausage in a separate bowl. Season with a pinch of salt and pepper for extra flavor.

            Fill the Cups: Once the hash brown cups are baked, remove them from the oven. Carefully pour the egg mixture into each cup, filling them almost to the top.

              Add Cheese: Sprinkle the remaining cheddar cheese over the top of the filled cups.

                Bake Again: Return the muffin tin to the oven and bake for an additional 15-20 minutes, or until the egg is set and the tops are golden.

                  Cool and Serve: Remove the muffin tin from the oven and allow the cups to cool for a couple of minutes. Run a knife around the edges to help loosen them. Gently lift them out and place on a serving platter.
