Greek Chicken Meatballs with Lemon Orzo

For the Greek Chicken Meatballs:

1 lb ground chicken

1/2 cup breadcrumbs (preferably whole wheat)

1/4 cup grated Parmesan cheese

1/4 cup finely chopped red onion

2 cloves garlic, minced

1/4 cup fresh parsley, chopped

1 tsp dried oregano

1 tsp salt

1/2 tsp black pepper

1 egg, beaten

Zest of 1 lemon

1 tbsp olive oil (for cooking)

For the Lemon Orzo:

1 cup orzo pasta

2 cups chicken broth (or vegetable broth)

1 tbsp olive oil

Juice of 1 lemon

1/4 cup feta cheese, crumbled

1/4 cup cherry tomatoes, halved

2 tbsp fresh dill, chopped (or parsley for garnish)

Salt and pepper, to taste

Prepare the Meatballs: In a large bowl, combine ground chicken, breadcrumbs, Parmesan cheese, red onion, garlic, parsley, oregano, salt, pepper, beaten egg, and lemon zest. Mix well until all ingredients are thoroughly combined.

    Form Meatballs: Using your hands, shape the mixture into small meatballs (about 1.5 inches in diameter). You should have about 12-16 meatballs.

      Cook Meatballs: Heat the olive oil in a large skillet over medium heat. Add the meatballs to the pan in a single layer (you may need to do this in batches). Cook for about 5-7 minutes on each side, or until golden brown and cooked through. Remove from skillet and set aside.

        Prepare the Lemon Orzo: In the same skillet, add the orzo and toast for about 2 minutes until it's slightly golden. Pour in the chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for about 10 minutes or until the orzo is tender and the liquid is absorbed.

          Add Flavor: Once the orzo is cooked, stir in olive oil, lemon juice, feta cheese, cherry tomatoes, and dill (or parsley). Season with salt and pepper to taste.

            Serve: Plate the lemon orzo and top with the Greek chicken meatballs. Optionally, garnish with extra chopped parsley or dill and a sprinkle of feta cheese for presentation.
