3 ripe tomatoes, diced

1 cucumber, diced

1 red onion, thinly sliced

1 bell pepper (red or yellow), chopped

1 cup Kalamata olives, pitted

200g feta cheese, crumbled

1/4 cup extra virgin olive oil

2 tablespoons red wine vinegar

1 teaspoon dried oregano

Salt and freshly ground black pepper, to taste

Fresh parsley, chopped (for garnish)

Prep the Veggies: In a large bowl, combine the diced tomatoes, cucumber, sliced red onion, and chopped bell pepper. Toss gently to mix.

    Add Olives: Stir in the Kalamata olives, making sure they are evenly distributed throughout the salad.

      Incorporate Feta: Crumble the feta cheese over the top of the vegetable mixture. Be careful not to break the cheese too much; it should remain in large chunks for texture.
