1 pound fresh green beans, trimmed and cut into 2-inch pieces

1 cup sliced mushrooms (button or cremini)

1 medium onion, finely chopped

2 cloves garlic, minced

1 can (10.5 oz) cream of mushroom soup (or homemade)

1/2 cup milk

1 cup shredded sharp cheddar cheese

1 tablespoon soy sauce

1 teaspoon Worcestershire sauce

1 teaspoon black pepper

1/2 teaspoon salt (to taste)

1 cup crispy fried onions (store-bought or homemade)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Beans: In a large pot of salted boiling water, blanch the green beans for 3-4 minutes until bright green and tender-crisp. Drain and immediately transfer to a bowl of ice water to stop the cooking process. Once cooled, drain again and set aside.

      Sauté the Aromatics: In a large skillet over medium heat, add a tablespoon of olive oil. Sauté the chopped onions until they become translucent (about 4-5 minutes). Add minced garlic and sliced mushrooms, cooking until the mushrooms are tender (approximately 4 more minutes).

        Combine the Base: In a large mixing bowl, combine the blanched green beans, the sautéed onion and mushroom mixture, cream of mushroom soup, milk, soy sauce, Worcestershire sauce, black pepper, and salt. Stir in ¾ cup of the cheddar cheese until well blended.

          Assemble the Casserole: Pour the mixture into a greased 9x13-inch baking dish. Spread it evenly and sprinkle the remaining ¼ cup of cheddar cheese on top.

            Bake: Place the baking dish in the preheated oven and bake for 25 minutes, or until bubbly.

              Add Crispy Onions: After 25 minutes, carefully remove the casserole from the oven. Sprinkle the crispy fried onions evenly over the top, then return it to the oven for an additional 10 minutes until the onions are golden brown.

                Serve and Garnish: Once done, remove the casserole from the oven and let it cool for a few minutes. Garnish with fresh chopped parsley before serving.
