8 oz elbow macaroni

2 cups cooked, shredded chicken breast

1 can (4 oz) diced mild green chilies

2 cups shredded sharp cheddar cheese

1 cup shredded Monterey Jack cheese

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

2 cups whole milk

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

1/2 cup breadcrumbs (for topping)

Fresh cilantro, chopped (for garnish)

Instructions
 

Cook the Macaroni: In a large pot, boil salted water and cook the elbow macaroni according to package directions until al dente. Drain and set aside.

    Prepare the Cheese Sauce: In a separate large saucepan, melt the butter over medium heat. Whisk in the flour and cook for about 1-2 minutes until lightly golden to create a roux.

      Add the Milk: Slowly pour in the whole milk while whisking continuously to avoid lumps. Cook for 4-5 minutes until the mixture thickens slightly.

        Season the Sauce: Stir in the garlic powder, onion powder, smoked paprika, and season with salt and pepper. Remove from heat.

          Cheese It Up: Gradually add the cheddar and Monterey Jack cheeses to the sauce, stirring until melted and creamy.

            Combine Ingredients: Add the cooked macaroni, shredded chicken, and diced green chilies to the cheese sauce. Mix thoroughly until everything is well combined.

              Prepare for Baking: Preheat your oven to 350°F (175°C). Transfer the mac and cheese mixture into a greased 9x13 inch baking dish.
