1 tablespoon baking powder

2 large eggs

¼ cup vegetable oil

1 cup diced green chilies (fresh, canned, or roasted)

½ cup shredded cheddar cheese

For the Slider Filling:

1 pound ground beef or turkey

1 teaspoon chili powder

½ teaspoon cumin

½ teaspoon garlic powder

Salt and pepper, to taste

Optional toppings: avocado slices, sour cream, or extra shredded cheese

Preheat the oven: Preheat your oven to 400°F (200°C). Grease a muffin tin or line it with muffin liners.

    Make the cornbread batter: In a large mixing bowl, combine the cornmeal, all-purpose flour, sugar, baking powder, and salt. In a separate bowl, whisk together the milk, eggs, and vegetable oil.
