Ingredients

1 lb ground turkey

1 can (4 oz) diced green chilies, drained

1 cup sharp cheddar cheese, shredded

1 medium onion, finely chopped

2 cloves garlic, minced

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and pepper to taste

8 slices sourdough bread

4 tablespoons butter, softened

Fresh cilantro, chopped (for garnish)

Instructions

Cook the Turkey Mixture: In a large skillet, heat a tablespoon of butter over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes. Add the ground turkey, breaking it apart with a spatula. Cook until browned and fully cooked, about 7-10 minutes. Stir in the diced green chilies, cumin, smoked paprika, salt, and pepper. Cook for an additional 2 minutes, allowing the flavors to meld.

Add Cheese: Remove the turkey mixture from heat and fold in the shredded cheddar cheese until it's melted and evenly incorporated. Set aside.

Prepare the Sandwiches: Preheat a griddle or skillet over medium heat. Spread a generous layer of butter on one side of each slice of sourdough bread. On the non-buttered side of 4 slices, pile on a good amount of the turkey and cheese mixture.

Assemble and Grill: Top with the remaining slices of sourdough, buttered side up. Place the sandwiches on the hot griddle and grill until golden brown, about 3-4 minutes per side, pressing down slightly to ensure even cooking.

Serve: Once both sides are golden and the cheese is melty, remove the grilled melts from the skillet. Let them cool for a moment, then slice in half. Garnish with fresh cilantro for an added pop of flavor and color.

Enjoy: Serve your Spicy Green Chili Turkey Grilled Melts warm with your favorite dipping sauce or on their own!
