Green Chili Veggie Wraps for School

4 large whole wheat tortillas

1 cup cooked quinoa

1 cup black beans, rinsed and drained

1 cup corn kernels (fresh or frozen)

1 medium red bell pepper, diced

1 medium cucumber, finely chopped

1 ripe avocado, sliced

1/2 cup green chili sauce (mild or spicy, based on preference)

1/4 cup fresh cilantro, chopped

1 tablespoon lime juice

Salt and pepper to taste

Prepare the Quinoa: If not already cooked, rinse 1/2 cup of quinoa and add it to a pot with 1 cup of water. Bring to a boil, then reduce the heat and cover, simmering for about 15 minutes or until the water is absorbed. Fluff with a fork and let it cool.

    Mix the Filling: In a large bowl, combine the cooked quinoa, black beans, corn, diced bell pepper, chopped cucumber, and cilantro. Drizzle with lime juice and add the green chili sauce. Season with salt and pepper to taste. Mix well until all ingredients are evenly combined.

      Assemble the Wraps: Lay a whole wheat tortilla flat on a clean surface. Place a generous scoop of the veggie filling in the center of the tortilla, leaving space at the edges to fold. Add a few slices of avocado on top for creaminess.
