Ingredients

2 slices of artisanal sourdough bread

2 tablespoons truffle butter (melted)

1 cup shredded aged cheddar cheese

1/2 cup fontina cheese, shredded

1/4 cup grated Parmesan cheese

1 tablespoon fresh thyme leaves

Sea salt and freshly cracked black pepper, to taste

Optional: a drizzle of truffle oil for extra flavor

Instructions

Prepare the Bread: Start by brushing both sides of the sourdough bread slices with the melted truffle butter. Make sure to coat them evenly for a rich, flavorful crust.

Mix the Cheeses: In a bowl, combine the aged cheddar, fontina, and Parmesan cheese. Add in the fresh thyme leaves and a pinch of sea salt and black pepper. Toss to mix well.

Assemble the Sandwich: Place one slice of the buttered sourdough in a preheated non-stick skillet over medium heat. Spread the cheese mixture evenly on top. Optional: add a few drops of truffle oil for an added gourmet touch. Place the second slice of buttered bread on top.

Grill It Up: Cook the sandwich for about 2-3 minutes, or until the bottom slice is golden brown and crispy. Carefully flip the sandwich over using a spatula, and cook the other side for another 2-3 minutes, or until it’s golden and the cheese is melted.

Slice and Serve: Once both sides are perfectly golden and the cheese is oozy, remove the sandwich from the skillet. Let it cool for a minute before slicing in half to reveal that melty, cheesy goodness.

Optional Toppings: Serve the sandwich with a side of marinara sauce for dipping or a fresh green salad to balance out the richness.
