Grilled Chicken & Corn Caesar Salad

This refreshing dish features juicy grilled chicken, sweet corn, and crisp romaine lettuce, all drizzled with a creamy Caesar dressing. Ingredients
  

2 boneless, skinless chicken breasts

1 cup fresh corn kernels (or 1 cup canned/frozen corn, drained)

1 Romaine lettuce heart, chopped

1/2 cup cherry tomatoes, halved

1/4 cup grated Parmesan cheese

1/4 cup Caesar dressing (store-bought or homemade)

1 teaspoon garlic powder

1 tablespoon olive oil

Salt and pepper to taste

Optional: croutons for topping, fresh parsley for garnish

Marinate the Chicken: In a small bowl, mix olive oil, garlic powder, salt, and pepper. Coat the chicken breasts with this mixture and let them marinate for at least 30 minutes (or up to 2 hours in the refrigerator for deeper flavor).

    Grill the Chicken: Preheat your grill or grill pan over medium-high heat. Once hot, add the marinated chicken breasts. Grill for 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C). Remove from the grill and let rest for a few minutes before slicing.

      Grill the Corn (if using fresh): If you're using fresh corn, grill the corn on the cob alongside the chicken (or use a skillet to char if it’s easier). Grill for about 10-12 minutes, turning occasionally, until you see grill marks. Once done, let cool slightly, then cut the kernels off the cob.

        Prepare the Salad: In a large salad bowl, add chopped Romaine lettuce, grilled corn, cherry tomatoes, and sliced grilled chicken. Toss gently to combine.

          Dress the Salad: Pour the Caesar dressing over the salad and toss to coat evenly. Sprinkle grated Parmesan cheese on top and add croutons for extra crunch if desired.

            Serve: Garnish with freshly chopped parsley if using, and serve immediately while the chicken is warm.
