Grilled Corn and Avocado Salsa

4 ears of fresh corn, husked

2 ripe avocados, diced

1 medium red onion, finely chopped

1 red bell pepper, diced

1 small jalapeño, seeds removed and minced (optional)

1/4 cup fresh cilantro, chopped

Juice of 2 limes

2 tablespoons olive oil

1 teaspoon smoked paprika

Salt and pepper to taste

Grill the Corn: Preheat your grill to medium-high heat. Lightly brush the corn with olive oil and place on the grill. Cook for about 10-12 minutes, turning occasionally, until the kernels are charred and tender. Remove from the grill and let cool slightly. Once cool, cut the kernels off the cob and place them in a large mixing bowl.

    Prepare the Salsa: To the bowl of grilled corn, add the diced avocados, chopped red onion, red bell pepper, and minced jalapeño if using.

      Dress the Salsa: In a small bowl, whisk together lime juice, the remaining olive oil, smoked paprika, salt, and pepper. Pour this dressing over the corn and avocado mixture.
