In recent years, the trend of incorporating grilled fruits into salads has gained traction among culinary enthusiasts. Grilling fruits like peaches not only enhances their natural sweetness but also adds a smoky depth that elevates the dish to new heights. When peaches are grilled, their sugars caramelize, creating a delicious contrast to the fresh, crisp greens and juicy blueberries that accompany them.

Ingredients

4 ripe peaches, halved and pitted

1 cup fresh blueberries

4 cups mixed salad greens (such as arugula and spinach)

1/2 cup crumbled feta cheese

1/4 cup chopped walnuts or pecans

3 tablespoons olive oil

1 tablespoon balsamic vinegar

1 tablespoon honey

Salt and pepper to taste

Fresh mint leaves for garnish (optional)

Instructions

Preheat the Grill: Preheat your grill to medium heat. If using a grill pan, place it over medium heat on your stovetop.

Prepare the Peaches: Brush the cut side of the peach halves lightly with olive oil to prevent sticking and enhance caramelization.

Grill the Peaches: Place the peaches cut side down on the grill. Grill for about 4-5 minutes, or until grill marks appear and the peaches are slightly softened. Flip and grill for an additional 2-3 minutes, then remove from the grill and allow to cool slightly.

Make the Dressing: In a small bowl, whisk together the remaining olive oil, balsamic vinegar, honey, salt, and pepper until well combined.

Assemble the Salad: In a large salad bowl, combine the mixed greens, grilled peach halves (cut into slices), fresh blueberries, crumbled feta, and chopped nuts.

Dress the Salad: Drizzle the prepared dressing over the salad and gently toss to combine all ingredients while ensuring the peaches and blueberries are well distributed.

Serve: Garnish with fresh mint leaves if desired, and serve immediately for a delightful summer dish!
