Grilled Peach & Burrata Salad

2 ripe peaches, halved and pitted

1 tablespoon olive oil

Sea salt and freshly ground black pepper, to taste

4 cups arugula or mixed greens

8 ounces burrata cheese, torn into pieces

¼ cup toasted walnuts, roughly chopped

2 tablespoons balsamic glaze

Fresh basil leaves, for garnish

Instructions
 

Preheat the Grill: Preheat your grill or grill pan over medium-high heat. Ensure it’s clean and lightly oiled to prevent sticking.

    Prepare the Peaches: Brush the cut sides of the peach halves with olive oil and season with a sprinkle of sea salt and pepper.

      Grill the Peaches: Place the peach halves cut-side down on the grill. Grill for about 3-4 minutes until they have nice grill marks and start to soften a little. Remove from the grill and let cool slightly.

        Assemble the Salad: In a large bowl, combine the arugula and toasted walnuts. Toss gently to distribute.

          Add the Burrata: Tear the burrata into pieces and place them strategically over the salad.

            Finish with Peaches: Cut the grilled peaches into wedges and arrange them on top of the salad.

              Drizzle and Garnish: Drizzle the balsamic glaze over the top. Scatter fresh basil leaves for an aromatic finish.
