Grilled Veggie Flatbread Pizza

2 large flatbreads or naan

1 cup marinara sauce or your favorite pizza sauce

1 cup shredded mozzarella cheese

1 small zucchini, sliced into thin rounds

1 red bell pepper, sliced into strips

1 small eggplant, sliced into thin rounds

1 medium red onion, sliced into rings

1 cup cherry tomatoes, halved

2 tablespoons olive oil

1 teaspoon Italian seasoning

Salt and pepper, to taste

Fresh basil leaves for garnish (optional)

Balsamic glaze for drizzling (optional)

Instructions
 

Preheat the Grill: Start by preheating your grill to medium-high heat. If using a grill pan, preheat it on the stovetop over medium heat.

    Prepare the Vegetables: In a large bowl, combine zucchini, bell pepper, eggplant, and red onion. Drizzle with olive oil, sprinkle with Italian seasoning, salt, and pepper. Toss well to coat all the veggies evenly.

      Grill the Veggies: Place the seasoned vegetables directly on the grill or in the grill pan. Grill for about 5-7 minutes, turning occasionally, until they are nicely charred and tender. Remove from the grill and set aside.

        Assemble the Pizzas: Lay the flatbreads or naan on a clean surface. Spread about ½ cup of marinara sauce on each flatbread, leaving a bit of a border around the edges. Sprinkle with shredded mozzarella cheese, then artfully layer the grilled vegetables on top. Add halved cherry tomatoes over the veggies.

          Grill the Pizzas: Transfer the assembled flatbreads to the grill. Close the grill lid and cook for about 5-7 minutes or until the cheese is melted and bubbly, and the edges of the flatbread are crispy.
