1 cup quinoa, rinsed

2 cups vegetable broth or water

1 medium zucchini, sliced into half-moons

1 red bell pepper, diced

1 yellow bell pepper, diced

1 cup cherry tomatoes, halved

1 small red onion, sliced

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

Salt and pepper to taste

1 avocado, sliced

1/4 cup fresh cilantro, chopped (for garnish)

Juice of 1 lime

Optional toppings: Feta cheese, hummus, or balsamic glaze

Cook the Quinoa: In a medium saucepan, combine the rinsed quinoa and vegetable broth. Bring to a boil, reduce heat to low, cover, and simmer for about 15-20 minutes, or until all the liquid is absorbed and the quinoa is fluffy. Remove from heat and let it sit covered for 5 minutes, then fluff with a fork.

    Prepare the Veggies: While the quinoa is cooking, preheat your grill (or grill pan) to medium-high heat. In a bowl, combine the zucchini, red and yellow bell peppers, cherry tomatoes, and red onion. Drizzle with olive oil, and sprinkle with smoked paprika, garlic powder, salt, and pepper.
