Grilled Zucchini and Halloumi

2 medium zucchinis, sliced into 1/4-inch thick rounds

8 oz halloumi cheese, cut into 1/2-inch thick slices

3 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon paprika

Freshly ground black pepper to taste

Juice of 1 lemon

Fresh mint or parsley for garnish (optional)

Prepare the Marinade: In a small bowl, mix the olive oil, minced garlic, dried oregano, paprika, black pepper, and lemon juice. This will be your marinade for the zucchini and halloumi.

    Marinate the Zucchini and Halloumi: In a shallow dish or resealable plastic bag, combine the zucchini rounds and halloumi slices with the marinade. Make sure they are well-coated. Let them marinate for at least 30 minutes at room temperature, or up to 2 hours in the refrigerator for enhanced flavors.

      Preheat the Grill: Start preheating your grill (or grill pan) to medium-high heat.
