Ingredients

1 lb (450g) ground beef

1 medium onion, finely chopped

3 cloves garlic, minced

8 oz (225g) mushrooms, sliced (cremini or button)

2 tablespoons olive oil

1 tablespoon Worcestershire sauce

1 teaspoon Dijon mustard

1 cup beef broth

1 cup sour cream

2 tablespoons all-purpose flour

1 teaspoon paprika

Salt and pepper to taste

12 oz (340g) egg noodles or wide pasta

Fresh parsley, chopped, for garnish

Instructions

Cook the Egg Noodles: Begin by bringing a large pot of salted water to a boil. Add the egg noodles and cook according to package instructions until al dente. Drain and set aside.

Brown the Beef: In a large skillet or sauté pan, heat the olive oil over medium-high heat. Add the ground beef and cook, breaking it apart with a spoon, until browned, about 5-7 minutes. Drain excess fat if necessary.

Sauté Vegetables: To the same pan with the beef, add the chopped onion and garlic. Sauté for about 3-4 minutes, until the onion is translucent. Add the sliced mushrooms and cook for another 5 minutes until mushrooms are tender.

Create the Sauce: Sprinkle the flour over the beef mixture and stir well to combine. Cook for 1-2 minutes to get rid of the raw flour taste. Then, slowly pour in the beef broth, stirring constantly to avoid lumps. Add Worcestershire sauce, Dijon mustard, and paprika. Season with salt and pepper to taste.

Thicken and Finish: Allow the mixture to simmer for about 5-7 minutes, until it thickens slightly. Once thickened, reduce the heat to low and gradually stir in the sour cream until fully incorporated.

Combine with Pasta: Fold the cooked egg noodles into the beef stroganoff mixture, ensuring the noodles are well coated with the creamy sauce.

Serve: Portion the creamy ground beef stroganoff onto plates, garnish with freshly chopped parsley, and serve hot!
