1 cup natural peanut butter (smooth or crunchy, preferably unsweetened)

1/4 cup honey or maple syrup

1 teaspoon vanilla extract

1/4 teaspoon sea salt

1 cup dark chocolate chips (at least 70% cacao)

2 tablespoons coconut oil

Optional: a sprinkle of sea salt for topping

Prepare the Cupcake Liners: Line a muffin tin with silicone or paper cupcake liners for easy removal.

    Make the Peanut Butter Filling: In a medium mixing bowl, combine the peanut butter, honey or maple syrup, vanilla extract, and sea salt. Stir until well mixed and smooth. Set aside.

      Melt the Chocolate: In a small saucepan, melt the dark chocolate chips and coconut oil over low heat, stirring constantly to prevent burning. Alternatively, you can melt the chocolate in the microwave in 30-second intervals until smooth.

        Assemble the Cups:
