Hatch Chili and Cheddar Breakfast Bake

1 cup roasted Hatch green chilies, diced (fresh or canned)

1 cup sharp cheddar cheese, grated

8 large eggs

1 cup whole milk

1 cup diced bread (preferably day-old, such as sourdough or French bread)

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon paprika

Salt and black pepper to taste

1/4 cup green onions, chopped (for garnish)

Optional: 1/2 cup cooked and crumbled breakfast sausage or bacon

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish with cooking spray or butter.

    Prepare the Bread: In a large bowl, combine the diced bread with the roasted Hatch green chilies and half of the grated cheddar cheese (1/2 cup). If using, also add the crumbled sausage or bacon at this stage. Set aside.

      Mix the Egg Base: In another bowl, whisk together the eggs, milk, garlic powder, onion powder, paprika, salt, and black pepper until well combined.

        Combine: Pour the egg mixture over the bread and chili mixture. Gently stir until all the bread is coated in the egg mixture. Let it sit for about 10 minutes to absorb the liquid.

          Transfer to Baking Dish: Pour the entire mixture into the greased baking dish, spreading it out evenly. Top with the remaining grated cheddar cheese.

            Bake: Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and a knife inserted in the center comes out clean.

              Garnish and Serve: Remove from the oven and let it cool slightly. Garnish with chopped green onions before serving. Cut into squares and enjoy warm!
