1 lb ground beef (or turkey for a leaner option)

1 cup long-grain white rice

2 cups beef broth (or water)

2 cups fresh Hatch green chiles, diced (mild or hot, to taste)

1 medium onion, chopped

3 cloves garlic, minced

1 tsp cumin

1 tsp smoked paprika

½ tsp chili powder (adjust to taste)

1 can (15 oz) diced tomatoes, drained

1 cup corn kernels (fresh, frozen, or canned)

Salt and pepper to taste

1 cup shredded cheddar cheese (optional, for topping)

Fresh cilantro for garnish (optional)

2 tbsp olive oil

Instructions
 

Sauté the beef: In a large skillet over medium-high heat, add the olive oil. Once hot, add the ground beef and cook until browned, approximately 5-7 minutes. Break it up with a spatula as it cooks. Drain any excess fat if necessary.

    Add vegetables: To the cooked beef, stir in the chopped onion and garlic. Sauté for another 3-4 minutes until the onion becomes translucent.

      Incorporate spices: Sprinkle in the cumin, smoked paprika, and chili powder. Stir to evenly coat the beef and vegetable mixture with the spices, cooking for an additional 1-2 minutes until fragrant.

        Combine rice and broth: Add the rice, diced Hatch chiles, drained tomatoes, corn, beef broth, and season with salt and pepper. Stir everything until well combined.

          Cook the rice: Bring the mixture to a boil, then reduce the heat to low. Cover the skillet and let simmer for 18-20 minutes, or until the rice is cooked and has absorbed most of the liquid.

            Finish the dish: Remove the skillet from heat. If using, sprinkle shredded cheddar cheese over the top and cover for 2-3 minutes until melted.

              Garnish and serve: Fluff the rice with a fork and serve hot, garnished with fresh cilantro if desired.
