2 cups shredded Monterey Jack cheese

1 cup diced tomatoes (fresh or canned)

1/2 cup sliced green onions

1/4 cup fresh cilantro (chopped)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Prepare the Chicken: In a bowl, mix the shredded chicken with diced Hatch green chiles, black beans, olive oil, taco seasoning, salt, and pepper. Ensure everything is well combined.

Layer the Nachos: On a large baking sheet, spread a layer of tortilla chips in an even layer. Top the chips evenly with the chicken mixture, ensuring all parts of the chips are covered.

Bake: Place the baking sheet in the preheated oven and bake for about 15-20 minutes, or until the cheese is melted and bubbly.

Garnish: Remove from the oven and top with diced tomatoes, sliced green onions, and fresh cilantro.

Add the Finishing Touches: Dollop sour cream and add sliced avocado on top for extra creaminess.
