Ingredients

1 cup fresh corn kernels (or frozen, thawed)

1 medium Hatch chili, seeds removed and finely chopped

1/2 cup all-purpose flour

1/2 cup cornmeal

1 teaspoon baking powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 teaspoon smoked paprika

1/4 cup green onions, finely chopped

1 large egg

1/2 cup buttermilk (or regular milk)

2 tablespoons fresh cilantro, chopped (optional)

Oil for frying (vegetable or canola)

Instructions

Prepare the Batter: In a large mixing bowl, combine the all-purpose flour, cornmeal, baking powder, salt, black pepper, and smoked paprika. Mix well to combine the dry ingredients.

Add Wet Ingredients: Add the egg and buttermilk to the dry mixture. Stir until just combined; do not over-mix.

Fold in Veggies: Gently fold in the fresh corn, Hatch chili, green onions, and cilantro (if using) until evenly distributed in the batter.

Heat the Oil: In a deep skillet or frying pan, heat about 1/4 inch of oil over medium heat. To test if the oil is hot enough, drop a small spoonful of batter into the oil; it should sizzle and rise to the surface.

Fry the Fritters: Using a tablespoon, scoop batter and carefully drop it into the hot oil. Fry the fritters in batches, being careful not to overcrowd the pan. Cook for about 2-3 minutes on each side or until golden brown and crispy.

Drain Excess Oil: Using a slotted spoon, transfer the fritters to a paper towel-lined plate to drain off excess oil.

Serve Warm: These fritters are best served warm. Pair them with a chipotle aioli or a fresh salsa for dipping. Enjoy your delightful Spicy Hatch Chili Corn Fritter Bites!
