1 cup cornmeal

1 cup all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1 cup buttermilk

2 large eggs

1/4 cup unsalted butter, melted

1 cup Hatch green chilies, roasted and chopped (canned or fresh)

1 cup cooked sausage, crumbled (Italian or breakfast sausage)

1 cup shredded sharp cheddar cheese

1 tablespoon honey (optional, for a touch of sweetness)

1/2 teaspoon smoked paprika (optional, for extra flavor)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a mini muffin pan with non-stick spray or line with mini muffin liners.

    Mix Dry Ingredients: In a large mixing bowl, whisk together the cornmeal, all-purpose flour, baking powder, and salt until well combined.

      Whisk Wet Ingredients: In another bowl, whisk together the buttermilk, eggs, melted butter, and honey until smooth.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients, stirring gently until just combined. Be careful not to overmix—the batter should be slightly lumpy.

          Fold in Add-Ins: Gently fold in the roasted and chopped Hatch green chilies, crumbled sausage, shredded cheddar cheese, and smoked paprika until evenly distributed.

            Fill Muffin Pan: Spoon the batter into the prepared mini muffin pan, filling each cup about 2/3 full to allow room for rising.
