Hatch Chili Egg Toast Bakes

4 large eggs

½ cup milk

1 cup roasted Hatch green chilies, diced (fresh or canned)

1 cup shredded cheddar cheese

1 teaspoon garlic powder

½ teaspoon onion powder

Salt and pepper to taste

4 slices of sturdy bread (like sourdough or whole grain)

2 tablespoons butter, melted

Fresh cilantro or green onions for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C) and grease a muffin tin with cooking spray or butter.

    Prepare the Egg Mixture: In a large mixing bowl, whisk together the eggs and milk until well combined. Add in the roasted Hatch chilies, cheddar cheese, garlic powder, onion powder, salt, and pepper. Mix until everything is well incorporated.

      Prepare the Bread: Using a rolling pin, flatten each slice of bread to about half its thickness. Cut out circles from the bread to fit in the muffin tin cups, or simply press the entire slice into the muffin cup, creating a little bread bowl.

        Assemble: Brush the flattened bread rounds with melted butter and gently press them into the muffin tin, making sure to form a base for your egg mixture.
