Pizza Dough: 1 pre-made dough (store-bought or homemade)

Olive Oil: 2 tablespoons

Hatch Green Chiles: 1 cup, diced (fresh or canned)

Red Bell Pepper: 1 medium, diced

Spinach: 2 cups, fresh, roughly chopped

Mushrooms: 1 cup, sliced (button or cremini)

Eggs: 4 large

Cheddar Cheese: 1 cup, shredded

Feta Cheese: 1/2 cup, crumbled

Garlic: 2 cloves, minced

Cumin: 1 teaspoon

Salt: 1/2 teaspoon (to taste)

Black Pepper: 1/4 teaspoon (to taste)

Fresh Cilantro: 1/4 cup, chopped (for garnish)

Avocado: 1, sliced (for topping)

Instructions
 

Preheat the Oven: Preheat your oven to 475°F (245°C) and if using a pizza stone, place it in the oven to heat as well.

    Prepare the Dough: On a lightly floured surface, roll out the pizza dough into your desired thickness (about 12 inches in diameter). Transfer to a parchment-lined baking sheet or pizza paddle if using a pizza stone.

      Sauté the Vegetables: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the garlic, diced Hatch chiles, red bell pepper, mushrooms, and spinach. Sauté for about 5-7 minutes until the vegetables are softened and the spinach is wilted. Season with cumin, salt, and pepper. Remove from heat.

        Assemble the Pizza: Spread the sautéed vegetable mixture evenly over the pizza dough. Sprinkle the shredded cheddar cheese on top, then make four small wells in the toppings to crack the eggs into.

          Bake the Pizza: Carefully crack an egg into each well and sprinkle the crumbled feta cheese over the top. Place the pizza in the preheated oven (directly on the stone if using) and bake for 12-15 minutes, or until the eggs are set and the cheese is bubbly and lightly golden.

            Garnish and Serve: Remove the pizza from the oven and let it cool for a minute. Top with fresh cilantro and sliced avocado. Slice and serve immediately.
