2 cups all-purpose flour

1/4 cup granulated sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup unsalted butter, cold and cubed

1/2 cup cream cheese, softened

1 large egg

1 teaspoon vanilla extract

1/4 cup buttermilk

For the Cheesecake Filling:

8 oz cream cheese, softened

1/4 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1/2 cup crushed pineapple, drained

For the Topping:

1/4 cup shredded coconut, toasted

Fresh pineapple slices (optional)

Powdered sugar (for dusting)

Prepare the Dough: In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt. Add the cold, cubed butter and cream cheese, mixing until crumbly.

    In a separate bowl, whisk together the egg, vanilla extract, and buttermilk. Gradually add this mixture to the dry ingredients, stirring until a soft dough forms. Do not overmix.

      Turn the dough out onto a lightly floured surface and gently knead it a few times. Divide the dough into two equal portions, flatten them into discs, wrap in plastic wrap, and refrigerate for at least 30 minutes.

        Make the Cheesecake Filling: In a medium bowl, beat the softened cream cheese and sugar until smooth. Add the egg and vanilla extract, mixing until well combined. Stir in the crushed pineapple until evenly distributed. Refrigerate until ready to use.

          Preheat the Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.

            Roll Out the Dough: Remove one disc of dough from the refrigerator and roll it out on a lightly floured surface into a rectangle about 1/4 inch thick. Cut into squares (about 4x4 inches).

              Fill the Danish: Place a generous tablespoon of the cheesecake filling in the center of each square. Fold the corners of the dough toward the center, pinching to seal them together, forming a parcel.

                Repeat: Roll out the second disc and repeat the filling process with the remaining squares.

                  Bake: Place the filled Danish on the prepared baking sheet. Bake in the preheated oven for 20-25 minutes or until golden brown.

                    Add Toasted Coconut: While the Danish are still warm, sprinkle the toasted coconut on top and add fresh pineapple slices if desired.
