2 cups elbow macaroni

1 cup mayonnaise (preferably Hawaiian-style or a tangy brand)

1 tablespoon apple cider vinegar

1 tablespoon Dijon mustard

1 tablespoon granulated sugar

1 cup diced ham (or spam for authenticity)

1 cup crushed pineapple (drained)

1/2 cup diced green bell pepper

1/2 cup grated carrots

1/4 cup chopped green onions

Salt and black pepper to taste

Optional: 1/4 cup shredded coconut for garnish

Cook the Pasta: In a large pot of boiling salted water, cook the elbow macaroni according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside to cool completely.

    Make the Dressing: In a medium bowl, whisk together the mayonnaise, apple cider vinegar, Dijon mustard, and granulated sugar until smooth and creamy. Adjust the seasoning with salt and pepper to taste.
