2 cups rolled oats

1 cup unsweetened applesauce

1 large apple, diced (preferably a sweet variety like Honeycrisp or Fuji)

1/2 cup almond butter (or any nut butter of your choice)

1/4 cup honey or maple syrup

1 teaspoon cinnamon

1/2 teaspoon vanilla extract

1/4 teaspoon salt

1/2 cup walnuts or pecans, chopped (optional)

1/4 cup raisins or dried cranberries (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line an 8x8-inch baking dish with parchment paper, leaving some overhang for easy removal.

    Mix Dry Ingredients: In a large bowl, combine the rolled oats, cinnamon, and salt, mixing until well combined.

      Prepare the Wet Ingredients: In another bowl, whisk together the unsweetened applesauce, almond butter, honey (or maple syrup), and vanilla extract until smooth and well combined.

        Combine Mixtures: Pour the wet mixture into the dry oat mixture. Stir until the oats are evenly coated. Gently fold in the diced apple, nuts, and dried fruit (if using). The mixture should be thick.

          Transfer to Baking Dish: Spread the mixture evenly in the prepared baking dish, pressing it down firmly to pack it in. This helps the bars hold their shape after baking.

            Bake: Bake for 25-30 minutes, or until the edges are lightly golden and the center feels set.
