Healthy Garlic Cheddar Cauliflower Soup Recipe

1 large head of cauliflower, chopped into florets

4 cloves of garlic, minced

1 medium onion, diced

4 cups low-sodium vegetable broth

1 cup unsweetened almond milk (or any dairy or non-dairy milk of choice)

1 cup shredded sharp cheddar cheese (reserve some for garnish)

2 tablespoons olive oil

1 teaspoon dried thyme

1 teaspoon salt (or to taste)

½ teaspoon black pepper (adjust to taste)

Fresh parsley or chives for garnish (optional)

Instructions
 

Sauté Aromatics: In a large pot, heat olive oil over medium heat. Add diced onion and sauté until it becomes translucent, about 5 minutes. Add minced garlic and sauté for an additional 1-2 minutes until fragrant.

    Cook Cauliflower: Add the chopped cauliflower to the pot. Stir to combine with the onions and garlic. Cook for another 5 minutes, allowing the cauliflower to soften slightly.

      Add Broth: Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat to a simmer and add dried thyme, salt, and pepper. Cover and let it simmer for about 15-20 minutes, or until the cauliflower is tender.

        Blend Soup: Once the cauliflower is soft, remove the pot from heat. Using an immersion blender, carefully blend the soup until smooth and creamy. If you don’t have an immersion blender, you can transfer the soup in batches to a regular blender, then return it to the pot.

          Add Milk and Cheese: Stir in the almond milk and shredded cheddar cheese until the cheese is melted and the soup is creamy. Adjust seasoning if necessary.

            Serve: Ladle the soup into bowls, and garnish with additional shredded cheese and fresh herbs like parsley or chives, if desired. Enjoy hot!
