Healthy Greek Chicken Pita Wraps

1 lb (450g) boneless, skinless chicken breasts

2 tbsp olive oil

1 tsp dried oregano

1 tsp garlic powder

1/2 tsp paprika

Salt and pepper to taste

4 whole wheat pita pockets

1 cup cherry tomatoes, halved

1 cucumber, diced

1/2 red onion, thinly sliced

1 cup baby spinach or mixed greens

1/2 cup feta cheese, crumbled (optional for a healthier version)

1/4 cup kalamata olives, pitted and sliced

1/2 cup tzatziki sauce (store-bought or homemade)

Fresh dill or parsley for garnish (optional)

Instructions
 

Marinate the Chicken: In a mixing bowl, combine the olive oil, dried oregano, garlic powder, paprika, salt, and pepper. Add the chicken breasts and coat them evenly. Let marinate for at least 30 minutes (or up to 2 hours in the refrigerator).

    Cook the Chicken: Preheat a grill pan or outdoor grill over medium-high heat. Grill the chicken for about 6-7 minutes on each side or until fully cooked through and juices run clear. Remove from heat and let rest for 5 minutes.

      Prepare the Vegetables: While the chicken is resting, chop the cherry tomatoes, cucumber, and red onion. Set aside.

        Slice the Chicken: Once the chicken has rested, slice it into thin strips.

          Assemble the Wraps: Warm the pita pockets if desired. Spread a spoonful of tzatziki sauce on the inside of each pita pocket. Layer in the baby spinach, sliced chicken, cherry tomatoes, cucumber, red onion, feta cheese, and olives.

            Garnish and Serve: Drizzle a little more tzatziki sauce on top and sprinkle with fresh dill or parsley if desired. Serve the wraps immediately, or wrap them in foil for a convenient on-the-go meal.
