1 lb ground turkey (preferably lean)

1 tablespoon olive oil

2 cloves garlic, minced

1 small onion, finely chopped

1 bell pepper (any color), diced

1 cup shredded carrots

1 can (8 oz) water chestnuts, drained and chopped

3 tablespoons soy sauce (low sodium)

1 tablespoon rice vinegar

1 tablespoon hoisin sauce (optional for sweetness)

1 teaspoon sesame oil

1 teaspoon fresh ginger, minced (or 1/2 teaspoon ground ginger)

Salt and pepper to taste

2 heads of butter or iceberg lettuce (for wrapping)

Optional toppings: chopped green onions, sesame seeds, or cilantro

Instructions
 

Prepare the Lettuce: Carefully separate the lettuce leaves, rinse them under cold water, and set aside to dry. These will serve as your wraps.

    Cook the Turkey: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and chopped onion, sauté for about 2-3 minutes until they become fragrant and translucent.

      Add the Turkey: Increase the heat to medium-high and add the ground turkey into the skillet. Cook until the turkey is browned and fully cooked, breaking it apart with a spoon, about 5-7 minutes.

        Mix in Veggies: Stir in the diced bell pepper, shredded carrots, and chopped water chestnuts. Cook for an additional 3-4 minutes until the veggies are tender-crisp.

          Season the Filling: Pour in the soy sauce, rice vinegar, hoisin sauce (if using), sesame oil, and minced ginger. Mix thoroughly, and allow the mixture to simmer for about 2-3 minutes. Season with salt and pepper to taste.

            Assemble the Wraps: Take a lettuce leaf and spoon a generous amount of the turkey mixture into the center. Top with optional green onions, sesame seeds, or cilantro for added flavor and texture.
