1 medium onion, chopped

2 cloves garlic, minced

1 large potato, peeled and diced

4 cups vegetable broth

1 tablespoon olive oil

1 teaspoon dried thyme

1 teaspoon salt (adjust to taste)

½ teaspoon black pepper

1 tablespoon lemon juice

Sauté the Vegetables: In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing for about 3-4 minutes until the onion is translucent.

    Add Zucchini and Potato: Stir in the diced zucchini and potato. Cook for an additional 5 minutes, stirring occasionally until the vegetables start to soften.

      Combine Ingredients: Pour in the vegetable broth and add the dried thyme, salt, and black pepper. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 15-20 minutes, or until the potatoes and zucchini are tender.
