1 large sweet potato, peeled and diced into small cubes

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) kidney beans, rinsed and drained

1 can (28 oz) diced tomatoes (with juices)

1 medium onion, diced

3 cloves garlic, minced

1 bell pepper (any color), diced

2 tablespoons chili powder

1 tablespoon cumin

1 teaspoon smoked paprika

1 teaspoon salt (or to taste)

½ teaspoon black pepper

2 cups chicken or vegetable broth

1 tablespoon olive oil

Fresh cilantro (for garnish)

Optional toppings: sour cream, avocado, shredded cheese

Instructions
 

Prepare the Ingredients: Begin by prepping your vegetables. Dice the onion, bell pepper, and sweet potato, and mince the garlic. Get all your ingredients measured and within reach.

    Sauté the Vegetables: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and bell pepper, sautéing until they are softened (about 5-7 minutes). Add the minced garlic and continue cooking for another minute until fragrant.
