Ingredients

4 cod fillets (6 oz each)

1 cup fresh breadcrumbs (preferably whole grain)

1/4 cup grated Parmesan cheese

1/4 cup fresh parsley, chopped

2 tablespoons fresh dill, chopped

1 tablespoon fresh basil, chopped

2 cloves garlic, minced

1 teaspoon lemon zest

Juice of 1 lemon

3 tablespoons olive oil

Salt and black pepper to taste

Lemon wedges for serving

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with olive oil.

Prepare the Herb Mixture: In a large mixing bowl, combine the fresh breadcrumbs, grated Parmesan cheese, chopped parsley, dill, basil, minced garlic, lemon zest, and two tablespoons of olive oil. Mix until the ingredients are well combined and resemble a moist crumbly mixture.

Season the Cod: Pat each cod fillet dry with paper towels and place them on the prepared baking sheet. Drizzle the lemon juice and the remaining tablespoon of olive oil over the fillets and season with salt and black pepper to taste.

Apply the Herb Crust: Gently press the herb and breadcrumb mixture onto the top of each cod fillet, ensuring that it adheres well and creates a thick layer.

Bake the Cod: Place the baking sheet in the preheated oven and bake for 15-20 minutes, or until the fish is opaque and flakes easily with a fork, and the crust is golden brown.

Serve: Remove the cod from the oven and let it rest for a few minutes. Serve the herb crusted baked cod with lemon wedges on the side for an extra zest.
