Ingredients

1 pound beef sirloin steak, cut into 1-inch cubes

2 tablespoons olive oil

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon garlic powder

½ teaspoon onion powder

For the Chimichurri Sauce:

1 cup fresh parsley, finely chopped

½ cup fresh cilantro, finely chopped

3 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to taste)

½ cup extra-virgin olive oil

3 tablespoons red wine vinegar

1 teaspoon dried oregano

Salt and pepper to taste

Instructions

Prepare the Chimichurri Sauce: In a medium bowl, mix together the finely chopped parsley, cilantro, minced garlic, and red pepper flakes. Stir in the extra-virgin olive oil, red wine vinegar, and dried oregano until well combined. Season with salt and pepper to taste. Set aside to let the flavors meld.

Season the Steak: In a large mixing bowl, combine the cubed steak, olive oil, salt, black pepper, garlic powder, and onion powder. Toss well to ensure all the steak pieces are evenly coated with the seasoning.

Cook the Steak Bites: Heat a large skillet or grill pan over medium-high heat. Once hot, add the seasoned steak bites in a single layer (do this in batches if necessary to avoid overcrowding). Sear for about 2-3 minutes on each side for medium-rare, or longer if desired. Remove from heat and let them rest for a couple of minutes.

Serve: Arrange the steak bites on a serving platter and drizzle generously with the chimichurri sauce. You can also serve additional sauce on the side for dipping.

Garnish: Optionally, sprinkle with extra fresh herbs or serve with lemon wedges for an extra zing.
