For the Chicken Stew:

1.5 lbs boneless, skinless chicken thighs, cut into chunks

1 medium onion, diced

3 cloves garlic, minced

2 medium carrots, sliced

2 ribs celery, diced

1 cup frozen peas

4 cups low-sodium chicken broth

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 bay leaf

Salt and pepper, to taste

2 tablespoons olive oil

For the Dumplings:

2 cups all-purpose flour

1 tablespoon baking powder

1 teaspoon salt

1/2 cup milk

1/4 cup butter, melted

1 tablespoon fresh parsley, chopped (optional)

Instructions
 

Prepare the Chicken Stew:

    - In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion, carrots, and celery; sauté for about 5 minutes until the vegetables begin to soften.

      - Add the chicken thighs to the pot, cooking until they are slightly browned on the outside, about 5-7 minutes.

        - Stir in the minced garlic, thyme, rosemary, salt, and pepper. Cook for another minute until fragrant.

          - Pour in the chicken broth and add the bay leaf. Bring to a boil, then reduce heat and let it simmer for 15-20 minutes, or until the chicken is cooked through.

            Make the Dumpling Dough:

              - In a medium bowl, whisk together the flour, baking powder, and salt.

                - In a separate bowl, mix the milk and melted butter. Pour the milk mixture into the dry ingredients and stir until just combined. Do not overmix; the dough should be slightly sticky.

                  Combine and Cook:

                    - Remove the bay leaf from the chicken stew and add the frozen peas.

                      - Using a spoon or scoop, drop the dumpling dough by heaping tablespoons onto the surface of the bubbling stew. Make sure the dumplings are evenly spaced; they will expand as they cook.

                        - Cover the pot with a lid and let the dumplings steam for about 15 minutes. Avoid lifting the lid during this time to ensure the dumplings are light and fluffy.

                          Serve and Enjoy:

                            - Check that the dumplings are cooked through (they should be fluffy and no longer doughy at the center). Serve the chicken and dumplings in deep bowls, garnished with fresh parsley if desired.
