2 lbs baby potatoes (red or Yukon gold), halved

6 strips of crispy bacon, chopped

1/4 cup honey

2 tablespoons olive oil

1 tablespoon Dijon mustard

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and black pepper, to taste

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Potatoes: In a large mixing bowl, combine the halved baby potatoes with olive oil, garlic powder, smoked paprika, salt, and black pepper. Toss until the potatoes are evenly coated.

      Mix the Glaze: In a separate small bowl, whisk together the honey and Dijon mustard until well combined. Stir in the chopped bacon pieces.
