Ingredients
  

1 pound (450g) large shrimp, peeled and deveined

2 tablespoons vegetable oil (divided)

1 bell pepper (red or yellow), sliced

1 cup broccoli florets

1 medium carrot, sliced thinly

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

1/4 cup honey

1/4 cup soy sauce (low sodium)

1 tablespoon rice vinegar

1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)

Salt and pepper to taste

Cooked jasmine rice or noodles, for serving

Sesame seeds and sliced green onions for garnish (optional)

Instructions
 

Prepare the Shrimp: In a medium bowl, toss the shrimp with a pinch of salt and pepper. Set aside.

    Create the Sauce: In a small bowl, whisk together honey, soy sauce, rice vinegar, and cornstarch mixture. Set this sauce aside.

      Heat the Pan: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat.

        Cook the Shrimp: Add the shrimp to the skillet and stir-fry for about 2-3 minutes until they turn pink and opaque. Remove the shrimp from the skillet and set aside.

          Sauté the Vegetables: In the same skillet, add the remaining tablespoon of vegetable oil. Add the sliced bell pepper, broccoli florets, and carrots. Stir-fry for about 4-5 minutes, until the vegetables are tender-crisp.

            Add Garlic and Ginger: Stir in the minced garlic and grated ginger, cooking for an additional 30 seconds until fragrant.

              Add the Sauce: Return the cooked shrimp to the skillet. Pour the honey-garlic sauce over the shrimp and vegetables. Stir well to combine and allow the sauce to thicken for about 1-2 minutes.

                Serve: Remove the skillet from the heat. Serve the honey garlic shrimp stir-fry over cooked jasmine rice or noodles. Garnish with sesame seeds and sliced green onions if desired.
