Honey Mustard Chicken and Apple Skewers

For the Marinade:

1/4 cup honey

1/4 cup Dijon mustard

2 tablespoons apple cider vinegar

2 tablespoons olive oil

2 cloves garlic, minced

Salt and pepper to taste

For the Skewers:

1 pound boneless, skinless chicken breasts, cut into 1-inch cubes

2 medium apples, cored and cut into 1-inch cubes (preferably Honeycrisp or Fuji)

1 red bell pepper, cut into 1-inch squares

1 green bell pepper, cut into 1-inch squares

Olive oil, for drizzling

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Marinade:

    In a medium bowl, whisk together the honey, Dijon mustard, apple cider vinegar, olive oil, minced garlic, salt, and pepper until well combined.

      Marinate the Chicken:

        Place the chicken cubes in a resealable plastic bag or a glass dish. Pour half of the marinade over the chicken, ensuring it is well coated. Reserve the other half of the marinade for later use. Seal the bag or cover the dish and refrigerate for at least 30 minutes (up to 4 hours for maximum flavor).

          Assemble the Skewers:

            Preheat your grill or grill pan to medium-high heat. If using wooden skewers, soak them in water for 30 minutes to prevent burning. Thread the marinated chicken, apple cubes, and bell pepper squares alternately onto the skewers, leaving a little space between each piece to ensure even cooking.

              Grill the Skewers:

                Lightly drizzle the assembled skewers with olive oil and place them on the preheated grill. Cook for about 4-6 minutes on each side or until the chicken is cooked through (internal temperature reaches 165°F) and has nice grill marks. You can baste the skewers with the reserved marinade during grilling for added flavor.

                  Serve:

                    Once cooked, remove the skewers from the grill and let them rest for a few minutes. Garnish with fresh chopped parsley and serve with the remaining marinade on the side for dipping.
