Ingredients
  

4 salmon fillets (6 oz each)

3 tablespoons honey

3 tablespoons Dijon mustard

1 tablespoon olive oil

1 tablespoon apple cider vinegar

Salt and pepper to taste

6 cups mixed salad greens (spinach, arugula, and romaine)

1 cup cherry tomatoes, halved

1 avocado, sliced

1/2 cucumber, thinly sliced

1/4 red onion, thinly sliced

1/4 cup chopped walnuts or pecans (optional)

Fresh herbs (like dill or parsley) for garnish

Instructions
 

Prepare the Honey Mustard Glaze: In a small bowl, whisk together honey, Dijon mustard, olive oil, apple cider vinegar, salt, and pepper until smooth and well combined.

    Marinate the Salmon: Place the salmon fillets in a shallow dish and pour half of the honey mustard glaze over them. Let it marinate for about 15-20 minutes, turning halfway through.

      Cook the Salmon: Preheat your grill or skillet over medium-high heat. Once hot, place the marinated salmon fillets on the grill or skillet, cooking for 4-5 minutes per side or until the salmon is cooked through and flakes easily with a fork. Brush with additional glaze while cooking if desired.

        Assemble the Salad: In a large salad bowl, combine the mixed greens, cherry tomatoes, sliced avocado, cucumber, and red onion. Toss gently to mix.

          Drizzle and Toss: Drizzle the remaining honey mustard glaze over the salad and toss to coat everything evenly.

            Add the Salmon: Once the salmon is cooked, remove from the heat and let it rest for a minute. Place each salmon fillet on top of the salad and sprinkle with chopped walnuts or pecans if using.
