1 medium butternut squash, peeled and cubed (about 4 cups)

3 tablespoons honey

2 tablespoons olive oil

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 teaspoon sea salt

1/4 teaspoon black pepper

1 tablespoon balsamic vinegar (optional, for a tangy finish)

1/4 cup pecans or walnuts, roughly chopped (for garnish)

Fresh parsley or sage, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C). Prepare a baking sheet by lining it with parchment paper or lightly greasing it with oil.

    Prepare the Squash: Peel the butternut squash using a vegetable peeler. Cut it in half lengthwise and scoop out the seeds with a spoon. Then, cube the squash into approximately 1-inch pieces for even roasting.

      Mix the Dressing: In a large bowl, whisk together the honey, olive oil, ground cinnamon, ground nutmeg, sea salt, and black pepper until well combined. If using balsamic vinegar, stir it in at this stage.

        Coat the Squash: Add the cubed butternut squash to the bowl and toss until all pieces are evenly coated in the honey mixture.
