1 lb (450g) medium carrots, peeled and cut into equal-sized pieces

2 tablespoons olive oil

3 tablespoons honey

1 teaspoon salt

1/2 teaspoon black pepper

2 teaspoons fresh thyme leaves (or 1 teaspoon dried thyme)

Zest of 1 lemon

1 tablespoon lemon juice

Optional: chopped fresh parsley for garnish

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Carrots: In a large bowl, combine the cut carrots with olive oil, honey, salt, pepper, thyme, lemon zest, and lemon juice. Toss until the carrots are evenly coated.
