Ingredients

1 pound large shrimp, peeled and deveined

1 cup walnuts

1 cup cornstarch

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 cup mayonnaise

1/4 cup honey

1 tablespoon sweetened condensed milk

1 tablespoon lemon juice

2 cups vegetable oil (for frying)

2 green onions, sliced (for garnish)

Sesame seeds (for garnish, optional)

Instructions

Prepare the Walnuts: In a saucepan over medium heat, add the walnuts and sugar (about 1 cup of sugar). Stir frequently until the sugar melts and coats the walnuts, about 2-3 minutes. Once they are golden and caramelized, remove them from the heat and transfer them onto a baking sheet lined with parchment paper to cool.

Prepare the Shrimp: In a bowl, combine cornstarch, salt, and pepper. Toss the shrimp in the mixture until they are evenly coated. This will help create a crispy texture when frying.

Make the Sauce: In a separate bowl, whisk together the mayonnaise, honey, sweetened condensed milk, and lemon juice until smooth and well combined. Set aside.

Heat the Oil: In a deep pan or skillet, heat the vegetable oil over medium-high heat. To check if the oil is ready, drop a bit of cornstarch into the oil; it should sizzle immediately.

Fry the Shrimp: Carefully add the coated shrimp to the hot oil in small batches, being cautious not to overcrowd the pan. Fry for about 2-3 minutes or until the shrimp are golden brown and cooked through. Remove them using a slotted spoon and drain on paper towels.

Combine the Shrimp and Sauce: In a large mixing bowl, combine the cooked shrimp with the honey sauce and gently toss until the shrimp are well coated.

Add Walnuts: Fold in the caramelized walnuts, being careful not to break them apart too much.

Serve: Transfer the honey walnut shrimp to a serving dish. Garnish with sliced green onions and sesame seeds if desired. Serve immediately with steamed rice or as an appetizer.
