Ingredients

1 cup rotini pasta

1 cup cherry tomatoes, halved

1 cup mozzarella balls (bocconcini)

1 cup cucumber, diced

1/2 cup black olives, pitted and halved

1/2 cup bell peppers, diced (red and yellow for color)

1/4 cup fresh basil leaves

1/4 cup olive oil

2 tablespoons red wine vinegar

1 teaspoon Italian seasoning

Salt and pepper to taste

Skewers (8- to 10-inch wooden or metal)

Instructions

Cook the Pasta: Bring a large pot of salted water to a boil. Add the rotini pasta and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside to cool.

Prepare the Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, Italian seasoning, salt, and pepper until well blended. Set aside.

Assemble the Skewers: On each skewer, thread the ingredients in this order: cucumber, mozzarella ball, cherry tomato, bell pepper, basil leaf, and a few pasta spirals. Repeat this pattern until the skewer is filled, leaving a little space at each end for handling.

Drizzle with Dressing: Once the skewers are assembled, arrange them on a serving platter. Drizzle the prepared dressing over the skewers, ensuring everything is lightly coated.

Chill and Serve: For best flavor, let the skewers chill in the refrigerator for at least 30 minutes before serving. This allows the flavors to meld together beautifully.

Enjoy: Serve these delightful Italian pasta salad skewers as an appetizer, party snack, or a refreshing side dish with grilled meats.
