Ingredients

2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon baking powder

1/4 teaspoon salt

1 cup ricotta cheese

1 cup granulated sugar

1/2 cup unsalted butter, softened

2 large eggs

2 teaspoons vanilla extract

1/2 teaspoon almond extract

Zest of 1 lemon

1/2 cup powdered sugar (for icing)

1-2 tablespoons milk (for icing)

Sprinkles (optional, for decoration)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, baking powder, and salt. Set aside.

Cream Together Butter and Sugar: In a large mixing bowl, beat the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.

Add Ricotta and Eggs: Mix in the ricotta cheese, eggs, vanilla extract, almond extract, and lemon zest. Beat until smooth and well combined.

Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the ricotta mixture, mixing just until incorporated. Be careful not to overmix.

Scoop the Dough: Using a cookie scoop or tablespoon, drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.

Bake Cookies: Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden but the centers are still soft. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to wire racks to cool completely.

Prepare the Icing: In a small bowl, whisk together the powdered sugar and milk until smooth and pourable. Adjust the milk quantity as needed to achieve your desired consistency.

Ice the Cookies: Once the cookies are completely cooled, drizzle the icing over the tops and sprinkle with optional decorations (sprinkles).

Serve and Enjoy: Let the icing set for a few minutes before serving. Enjoy these delicious and soft treats with tea or coffee!
