Korean Japchae Noodles

8 oz sweet potato glass noodles (dangmyeon)

2 tablespoons vegetable oil

1 medium onion, sliced

2 cloves garlic, minced

1 medium carrot, julienned

1 bell pepper (any color), sliced into thin strips

1 cup spinach leaves, chopped

4-5 shiitake mushrooms, sliced (or any mushrooms of your choice)

2 green onions, sliced

2 eggs (optional, for a topping)

3 tablespoons soy sauce

1 tablespoon sesame oil

2 tablespoons sugar

1 tablespoon sesame seeds (for garnish)

Salt and pepper to taste

Instructions
 

Cook the Glass Noodles: In a large pot, bring water to a boil. Add the sweet potato glass noodles and cook for about 6-8 minutes until they are translucent and soft. Drain and rinse under cold water to stop cooking. Set aside.

    Prepare the Vegetables: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the sliced onion and garlic, stir-frying for about 2 minutes until fragrant.

      Add Remaining Vegetables: Incorporate the carrots, bell pepper, and mushrooms into the skillet. Stir-fry for another 3-4 minutes until they begin to soften. Finally, add the chopped spinach and cook until wilted (about 1 minute).

        Combine Noodles and Season: Add the cooked glass noodles to the vegetable mixture. In a small bowl, mix together the soy sauce, sesame oil, and sugar. Pour this mixture over the noodles and vegetables, stirring well to combine everything evenly. Season with salt and pepper to taste.

          Optional Egg Topping: If using, beat the eggs in a small bowl. In another pan, heat the remaining oil and pour in the beaten eggs to create a thin omelet. Cook until set, then flip and cook for another minute. Remove and slice into thin strips.
