Ingredients

1 pound large shrimp, peeled and deveined

3 tablespoons olive oil

4 cloves garlic, minced

Zest of 1 lemon

2 tablespoons fresh lemon juice

1 teaspoon smoked paprika

1 teaspoon dried oregano

1 teaspoon red pepper flakes (optional)

Salt and freshly ground black pepper, to taste

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

8-10 skewers (if using wooden skewers, soak in water for 30 minutes)

Instructions

Prepare the Marinade: In a mixing bowl, combine the olive oil, minced garlic, lemon zest, lemon juice, smoked paprika, oregano, red pepper flakes, salt, and black pepper. Whisk until well blended.

Marinate the Shrimp: Add the peeled and deveined shrimp to the marinade, making sure they are all well-coated. Cover and let marinate in the refrigerator for at least 30 minutes, up to 1 hour.

Preheat the Grill: Preheat your grill to medium-high heat. If using a grill pan, place it over medium-high heat until hot.

Skewer the Shrimp: Thread the marinated shrimp onto the skewers, about 4-5 shrimp per skewer (leaving a little space between each shrimp for even cooking).

Grill the Shrimp: Place the skewers on the grill and cook for 2-3 minutes on each side, or until the shrimp are opaque and cooked through. Avoid overcooking, as shrimp can become rubbery.

Garnish and Serve: Once done, remove the skewers from the grill. Sprinkle with chopped fresh parsley and serve immediately with lemon wedges on the side for an extra zing.

Enjoy: Pair these zesty lemon garlic shrimp skewers with a light salad, grilled vegetables, or over a bed of rice for a delightful and refreshing meal!
