Ingredients

1 pound large shrimp, peeled and deveined

1/4 cup freshly squeezed lemon juice (about 2 lemons)

2 tablespoons lemon zest (from 2 lemons)

1/4 cup honey

2 tablespoons soy sauce

2 cloves garlic, minced

1/2 teaspoon red pepper flakes (adjust for spice preference)

2 tablespoons olive oil

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Lemon slices (for garnish)

Instructions

Prepare the Shrimp: Rinse the shrimp under cold water and pat dry with paper towels. In a large bowl, toss the shrimp with a pinch of salt and pepper, and set aside.

Make the Marinade: In a separate bowl, combine the lemon juice, lemon zest, honey, soy sauce, minced garlic, and red pepper flakes. Whisk together until the honey is completely dissolved.

Marinate the Shrimp: Add the shrimp to the bowl with the marinade, ensuring that each piece is well coated. Cover and refrigerate for at least 30 minutes, allowing the flavors to meld.

Cook the Shrimp: In a large skillet over medium-high heat, add olive oil. Once hot, remove the shrimp from the marinade (reserve the marinade) and add them to the skillet in a single layer. Cook for about 2-3 minutes on each side until they turn pink and opaque. Be careful not to overcook.

Glaze the Shrimp: Once the shrimp are cooked, pour the reserved marinade into the skillet. Stir to combine with the shrimp and allow it to bubble gently for about 2-3 minutes, or until it thickens slightly and coats the shrimp.

Serve: Remove from heat, garnish with freshly chopped parsley and lemon slices. Serve immediately over a bed of rice, quinoa, or alongside a fresh salad for a light meal.
