1 large head of cauliflower

4 tablespoons olive oil

Juice and zest of 1 large lemon

2 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried oregano

1 teaspoon smoked paprika

½ teaspoon sea salt (or to taste)

¼ teaspoon black pepper

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Prepare the Cauliflower: Remove the leaves and stem from the head of cauliflower. Turn it upside down and slice it into ¾-inch thick “steaks.” You should be able to get about 2-3 nice-sized steaks from the center of the cauliflower, and you can use the florets for another dish.

    Make the Marinade: In a bowl, combine olive oil, lemon juice, lemon zest, minced garlic, thyme, oregano, smoked paprika, sea salt, and black pepper. Whisk until well blended.

      Marinate the Steaks: Place the cauliflower steaks in a large baking dish or on a tray. Brush both sides generously with the marinade. Let them marinate for at least 20 minutes to absorb the flavors.

        Preheat the Oven: While the cauliflower is marinating, preheat your oven to 425°F (220°C).

          Bake the Steaks: Line a baking sheet with parchment paper. Place the marinated cauliflower steaks on the sheet and drizzle any remaining marinade over the top. Bake in the preheated oven for 25-30 minutes, flipping halfway through, until the edges are golden brown and crispy.
