Lemon Ricotta Pasta

12 oz (340g) pasta of your choice (fettuccine, spaghetti, or penne)

1 cup fresh ricotta cheese

Zest of 1 large lemon

¼ cup fresh lemon juice (about 2 lemons)

2 tbsp extra virgin olive oil

2 cloves garlic, minced

1 cup cherry tomatoes, halved

½ cup grated Parmesan cheese, plus more for serving

Salt and freshly ground black pepper, to taste

Fresh basil leaves, for garnish

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Reserve 1 cup of the pasta cooking water, then drain the pasta.

    Prepare the Sauce: In a large skillet over medium heat, add the olive oil and minced garlic. Sauté for about 1 minute, or until the garlic is fragrant and lightly golden.

      Add Cherry Tomatoes: Stir in the halved cherry tomatoes and cook for about 3-4 minutes, until they start to soften and burst.

        Mix Ricotta and Citrus: In a mixing bowl, combine the ricotta cheese, lemon zest, lemon juice, and ½ cup of grated Parmesan cheese. Mix until well blended and creamy.

          Combine Pasta and Sauce: Add the drained pasta to the skillet with the garlic and tomatoes. Stir in the ricotta mixture. If the sauce is too thick, gradually add reserved pasta water, a little at a time, until you reach your desired creaminess.

            Season and Serve: Season with salt and freshly ground black pepper to taste. Serve immediately, garnished with fresh basil leaves and additional Parmesan cheese if desired.
